Sausage Fried Rice
The Chinese sausage fried rice is a delicious and savory dish. It's one of my favorites to make - image how kickass it'd be to bring this to a party.
Ingredients
- Half-pack of Chinese sausages (chopped)
- 1 large onion (thinly diced)
- 4 eggs
- ¼ tsp salt
- 2/3 cup frozen green peas (thawed)
- 3 green onions (chopped)
- 2 cups uncooked white rice
- Vegetable oil
- 1 tsp Chinese cooking wine [optional]
Sauce
- 1½ tsp salt
- ½ tsp sugar
- 4 tsp hot water
- ½ tsp sesame oil
- 3 tsp soy sauce
- ¼ tsp white pepper
Instructions
Prep
- Cook white rice with 1½ cups of water to give it a dryer quality.
- Make the sauce in a small bowl, combining everything. Set aside.
Cook
- After the rice has finished cooking, heat your pot over medium-high heat and add vegetable oil. Scramble your eggs with salt and cook until just done. Transfer back into the bowl you used to beat them. Set aside.
- Heat you pot again and add a dash of vegetable oil. Add the chopped sausages and stir-fry until the white marbled fat becomes clear.
- Add the diced onion and stir fry for a minute or two until the onion becomes translucent.
- Turn the heat to high, and add the rice. Mix the rice with the fried sausage and onion in a scooping motion until the rice is evenly distributed.
- Pour over the sauce and mix for about two minutes or until the rice is evenly coated. There should be no clumps of rice.
- Add the cooked egg and thawed frozen peas. Break the egg up with your spoon as you mix and stir fry for a minute.
- Finally, add the green onions and the cooking wine. Stir fry for 30 seconds.
